WARMING ACORN SQUASH SOUP

Total time 50-60 minutes
Ingredients:
• 7 Cups Vegetable stock or Spring water
• 3 Acorn squash peeled and chopped
• 2 Large carrots peeled and chopped
• 1 Large Yam or Sweet Potato peeled and chopped
• 1 teaspoon Ground Ginger
• 1 teaspoon Sage
• 2 Cups Organic Corn Kernels (fresh or frozen)
Directions:
In a large soup pot, bring the stock or water to a boil and stir in all the ingredients, except the corn. Cook over medium high for 20 mins or until squash is soft. Add the corn and cook for 5 minutes on low heat until corn is no longer frozen. Enjoy!
