Different foods will contain a special grouping of enzymes to help with the digestion of that particular food. For example, an apple will have more amylase to break down the natural fruit sugar than it has. Whereas an avocado will have more lipase to break down the fats and oils naturally occurring in that food. The same rule would apply to foods within the same family as well. Different apple varieties also have a unique enzyme combination for that species of apple. Each different food has minor differences in its enzyme composition. Here is a breakdown of the four most common enzymes found in our foods today.
